Rotisserie chicken is a cooking method where a whole chicken is skewered on a long rod and cooked slowly over an open flame, usually in an oven or on a grill. The chicken rotates continuously as it cooks, allowing the heat to evenly penetrate the meat and create a crispy and flavorful skin. This method of cooking results in a tender and juicy chicken with a deliciously caramelized exterior. Rotisserie chicken is often seasoned with various spices and herbs to enhance its flavor, making it a popular and convenient choice for meals.

Ingredients
  

  • 1 whole chicken (about 4-5 pounds)

  • 2 tablespoons olive oil

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme or rosemary (optional)

Instructions
 

  • Start by preparing your chicken. Remove any giblets from the cavity and pat the chicken dry with paper towels.
  • In a small bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, onion powder, and dried herbs (if using).
  • Rub the spice mixture all over the chicken, including inside the cavity. Make sure to coat the chicken evenly with the spices.
  • If your rotisserie setup requires you to truss the chicken (secure its legs and wings), do so at this point. If not, you can skip this step.
  • Thread the chicken onto the rotisserie rod, making sure it's balanced and secure.
  • Preheat your grill or oven to medium-high heat (around 350-375°F or 175-190°C).
  • If using a grill, make sure the burners on one side are turned off. Place a drip pan under the chicken to catch any drippings.
  • Place the chicken on the rotisserie and start the rotation. If using an oven, place the chicken on a roasting pan with a wire rack and roast it, turning occasionally, until the chicken is cooked through and the skin is crispy and golden brown. This usually takes about 1 to 1.5 hours, depending on the size of the chicken and the cooking temperature.
  • To ensure the chicken is cooked, insert a meat thermometer into the thickest part of the thigh without touching the bone. The internal temperature should reach 165°F (74°C).
  • Once the chicken is done, carefully remove it from the rotisserie rod and let it rest for about 10 minutes before carving and serving.
