Ingredients

  • 1 pound boneless, skinless chicken breast or thigh, cut into bite-sized pieces

  • 2 cups mixed vegetables (bell peppers, carrots, onions, celery, bean sprouts, etc.), sliced

  • 2 cloves garlic, minced

  • 2 tablespoons vegetable oil

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 teaspoon cornstarch (optional, for thickening the sauce)

  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  • In a bowl, marinate the chicken pieces with soy sauce, a pinch of salt, and a dash of pepper. Let it sit for about 15 minutes.
  • In a wok or large skillet, heat the vegetable oil over medium-high heat.
  • Add the marinated chicken and stir-fry until it's cooked through and no longer pink. Remove the chicken from the wok and set it aside.
  • In the same wok, add a bit more oil if needed. Add the minced garlic and sauté for a minute until fragrant.
  • Add the sliced vegetables to the wok and stir-fry for a few minutes until they start to become tender, but still retain their crispness.
  • In a small bowl, mix the oyster sauce with cornstarch (if using) and a bit of water to create a sauce mixture.
  • Push the vegetables to the side of the wok and pour the sauce mixture into the center. Allow it to simmer and thicken slightly.
  • Add the cooked chicken back into the wok, tossing everything together to coat the chicken and vegetables with the sauce.
  • Taste and adjust seasoning with additional soy sauce, salt, or pepper as needed.
  • Serve the Chicken Chop Suey over cooked rice and enjoy!

Notes

One important thing to note when making a Chicken Chop Suey recipe is to ensure that you don't overcook the vegetables. It's essential to maintain their vibrant colors, crispness, and nutrients. To achieve this, stir-fry the vegetables over medium-high heat for just a few minutes until they are slightly tender but still have a satisfying crunch. Overcooking can lead to mushy vegetables, which may affect the overall texture and appeal of the dish.
