  • Pat the Smithfield pork loin dry with paper towels. Season it generously with salt and pepper, ensuring even coverage on all sides.
  • Set your Instant Pot to "Sauté" mode. Once the display reads "Hot," add a small amount of oil (about 1-2 tablespoons) to the pot.
  • Sear the pork loin on all sides in the Instant Pot until nicely browned. This step is optional but can enhance flavor and texture.
  • If you seared the pork, remove it temporarily and pour in the liquid (water, broth, or juice). This will help create steam and prevent burning.
  • If you have a trivet or steamer basket, place it in the Instant Pot. This elevates the pork loin and prevents it from sitting directly in the liquid.
  • Return the pork loin to the Instant Pot, placing it on the trivet or directly in the liquid. Close the Instant Pot lid and set the valve to the "Sealing" position. Select the "Pressure Cook" or "Manual" setting and adjust the cooking time based on the thickness and weight of the pork loin (around 20-30 minutes for a 2-3 pound loin).
  • Once the cooking time is complete, allow the Instant Pot to naturally release pressure for about 10-15 minutes. Then, carefully perform a quick release by carefully turning the valve to "Venting."
  • Use a meat thermometer to check the internal temperature of the pork loin. It should read 145°F (63°C) for medium doneness. If needed, you can cook it a bit longer.
  • Allow the pork loin to rest for a few minutes before slicing. This allows the juices to redistribute and results in a juicier finished product.
  • Slice the pork loin and serve it with your favorite sides, sauces, or accompaniments.
