Equipment

  • mixing bowl
  • grill
  • tongs
  • serving platter

Ingredients

  • brown sugar
  • soy sauce
  • white wine
  • garlic
  • sesame oil
  • ginger
  • black pepper
  • asian pear
  • onion
  • sliced beef
  • mushrooms optional

Instructions

  • In a mixing bowl, combine all the marinade ingredients – soy sauce, brown sugar, mirin, sesame oil, minced garlic, grated ginger, black pepper, grated Asian pear or apple, and grated onion (if using). Mix well to dissolve the sugar.
  • If not using pre-sliced beef, place the beef in the freezer for about 20-30 minutes to make it easier to slice thinly.
  • Place the thinly sliced beef in the marinade, ensuring each slice is coated. Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours (or up to 24 hours) to allow the flavors to infuse.
  • Preheat a grill or grill pan over medium-high heat. If using, grill sliced mushrooms, onions, or scallions alongside the beef.
  • Once the grill is hot, grill the marinated beef slices for about 1-2 minutes per side, or until they are cooked to your preferred level of doneness. Cooking time can vary based on the thickness of the slices and grill temperature.
  • Transfer the grilled beef to a serving platter. Garnish with sliced scallions, sesame seeds, or additional marinade if desired.
  • Serve the Bulgogi with a side of steamed rice, lettuce leaves for wrapping, and traditional Korean condiments like kimchi and ssamjang (spicy dipping sauce). Create individual wraps by placing a piece of grilled beef in a lettuce leaf, adding condiments, and folding it up.

Notes

  • For the best results, use thinly sliced beef, about 1/8 inch thick. Many Asian markets offer pre-sliced beef specifically for Bulgogi.
  • Adjust the marinade ingredients according to your taste preferences.
  • If using a grill pan, make sure it's well-heated and lightly oiled before grilling the beef.
  • Bulgogi can also be enjoyed with a bowl of rice and a variety of side dishes, known as banchan, for a complete Korean meal experience.
