Ingredients
  

  • vegetable oil
  • onion
  • garlic
  • bell pepper
  • carrots
  • baked beans
  • curry powder
  • paprika
  • cumin
  • chili flakes
  • carrots
  • cabbage
  • cucumber
  • cherry tomatoes
  • fresh parsley
  • salt and pepper

Instructions
 

  • In a large skillet or pan, heat the vegetable oil over medium heat. Add the finely chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  • Add the diced green and red bell peppers, and grated carrots to the pan. Cook for a few minutes until the vegetables start to soften.
  • Stir in the baked beans, curry powder, ground paprika, ground cumin, and chili flakes. Season with salt and pepper to taste. Cook for another 5-7 minutes, allowing the flavors to meld together.
  • Remove the chakalaka from the heat and let it cool slightly.
  • In a large mixing bowl, combine the shredded cabbage, grated carrots, diced cucumber, sliced cherry tomatoes, and chopped fresh parsley or cilantro.
  • In a separate small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey (if using), salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss well to coat all the vegetables.
  • Once the chakalaka has cooled, spoon it over the salad or serve it on the side as a flavorful accompaniment.

Feel free to adjust the spice level of the chakalaka by adding more or less chili flakes according to your preference.
