  • Olive oil

  • 1 tablespoon butter

  • Salt and pepper to taste

Instructions
 

Prepare the Steaks:

  • - Take the fillet steaks out of the refrigerator about 20-30 minutes before cooking to allow them to come to room temperature.
    - Pat the steaks dry with paper towels to help achieve a good sear.
    - Season both sides of the steaks with salt.

Crust the Steaks:

  • Press crushed black peppercorns onto both sides of each steak to create a peppercorn crust. Press the peppercorns gently into the meat.

Sear the Steaks:

  • Heat a skillet or frying pan over high heat. Add a drizzle of olive oil.
  • Once the pan is hot, add the steaks. Sear for about 2-3 minutes on each side for medium-rare (adjust cooking time based on your preferred doneness).
  • After flipping the steaks, add a tablespoon of butter to the pan. As the butter melts, use a spoon to baste the steaks with the butter and pan juices.
