Equipment

  • large fryin pan
  • tongs
  • mixing bowl
  • kitchen paper towels

Ingredients

  • ox liver
  • all purpose flour
  • paprika
  • salt and pepper
  • large onions
  • vegetable oil
  • butter
  • beef broth
  • fresh parsley

Instructions

  • In a mixing bowl, combine the all-purpose flour, ground paprika, salt, and pepper. Mix well to create a seasoned flour mixture.
  • Dip each slice of ox liver into the seasoned flour, ensuring it is coated evenly. Shake off any excess flour and set the coated liver slices aside.
  • In a large frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, add the butter and allow it to melt.
  • Carefully place the coated liver slices into the hot pan. Fry the liver for about 2-3 minutes on each side or until they are nicely browned. Be cautious not to overcook the liver to maintain its tenderness.
  • Remove the fried liver slices from the pan and place them on a plate lined with kitchen paper towels to drain any excess oil.
  • In the same pan, add the thinly sliced onions. Cook the onions until they become soft and caramelized, stirring occasionally.
  • Pour the beef or chicken broth into the pan with the onions, and let it simmer for a few minutes until it thickens slightly to form a delicious onion gravy.
  • Return the fried liver slices to the pan, coating them in the onion gravy. Cook for an additional 1-2 minutes to allow the liver to absorb the flavors of the gravy.
  • Garnish the fried ox liver with fresh parsley if desired.
