Ingredients
  

  • turmeric
  • vegetable oil
  • onion
  • cloves garlic
  • ginger
  • cumin
  • coriander
  • cinnamon
  • potatoes
  • cayenne pepper
  • bell pepper
  • carrots
  • cauliflower florets
  • green beans
  • tomatoes
  • coconut milk
  • salt and pepper
  • paprika
  • cilantro

Instructions
 

  • In a large pot or skillet, heat vegetable oil over medium heat.
  • Add chopped onions and sauté until they turn translucent and slightly golden.
  • Stir in minced garlic and ginger, and cook for about 1 minute until fragrant.
  • Add ground cumin, ground coriander, ground turmeric, ground cinnamon, ground paprika, and cayenne pepper to the pot. Stir well to coat the aromatics with the spices.
  • Add diced potatoes, diced carrots, diced bell peppers, cauliflower florets, and green beans to the pot. Stir to combine and coat the vegetables with the spice mixture.
  • Pour in the diced tomatoes, coconut milk, and vegetable broth. Stir everything together.
  • Bring the mixture to a gentle simmer. Cover the pot and let the curry cook for about 20-25 minutes until the vegetables are tender.
  • Season the vegetable curry with salt and black pepper to taste. Adjust the seasoning if needed. Garnish with fresh cilantro leaves for a burst of freshness and color.
  • Ladle the vegetable curry into serving bowls. Serve it alongside cooked rice, naan, or any bread of your choice.
