Yaki Udon is a popular Japanese stir-fried noodle dish that features thick udon noodles cooked with various ingredients such as vegetables, protein (often meat or tofu), and a savory sauce. Ingredients
  

  • 200g udon noodles

  • 150g protein (chicken, beef, shrimp, tofu), sliced

  • 1 cup mixed vegetables (bell peppers, carrots, cabbage, etc.), sliced

  • 2 tablespoons vegetable oil

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon mirin (Japanese rice wine)

  • 1 teaspoon sugar

  • 1 teaspoon sesame oil

  • Optional: green onions and sesame seeds for garnish

Instructions
 

  • Cook the udon noodles according to package instructions. Drain and set aside.
  • In a small bowl, mix soy sauce, oyster sauce, mirin, sugar, and sesame oil to create the sauce. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  • Add the protein slices and cook until fully cooked. Remove from the pan and set aside.
  • In the same pan, add another tablespoon of oil if needed and sauté the mixed vegetables until they start to soften.
  • Push the vegetables to one side of the pan and add the cooked udon noodles to the other side.
  • Pour the prepared sauce over the noodles and vegetables. Gently toss everything together to combine.
  • Add the cooked protein back to the pan and continue to stir-fry for a couple of minutes until everything is heated through.
  • Taste and adjust seasoning if necessary.
  • Serve the Yaki Udon hot, garnished with chopped green onions and sesame seeds if desired.
