Ingredients
  

  • chicken pieces
  • olive oil
  • pepper
  • paprika
  • salt
  • oregano
  • thyme
  • chicken broth

  • maize meal

Instructions
 

  • Heat the olive oil in a large skillet or pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent and fragrant.
  • Add the chicken pieces to the skillet and cook until they are browned on all sides. This helps to seal in the flavors and ensures a crispy skin.
  • Sprinkle the paprika, dried thyme, dried oregano, salt, and black pepper over the chicken. Stir well to coat the chicken evenly with the spices.
  • Pour the chicken broth or water into the skillet, ensuring that the liquid covers the chicken pieces. Bring the mixture to a simmer.
  • Reduce the heat to low, cover the skillet, and let the chicken cook for about 30-35 minutes or until the chicken is cooked through and tender. Stir occasionally and add more liquid if needed to prevent sticking.
  • In a separate pot, bring the water to a boil. Add the salt.
    Gradually add the maize meal to the boiling water, stirring continuously to prevent lumps from forming. Be careful as the mixture may splutter.
  • Reduce the heat to low and cover the pot. Allow the maize meal to simmer for about 30 minutes, stirring occasionally to prevent sticking. The pap should be thick and have a smooth consistency.
  • Once the pap is cooked, remove it from the heat and let it rest for a few minutes.
  • Spoon a generous portion of the pap onto a plate or serving dish.
    Place a serving of the cooked chicken on top of the pap.
  • Serve the Pap and Chicken hot, garnished with fresh herbs if desired. You can also serve it with a side of steamed vegetables, chakalaka (a spicy relish), or tomato and onion salad.

You can adjust the seasoning and spices according to your taste preferences. Feel free to add more or less paprika, thyme, or other herbs and spices to suit your liking.
If you prefer a spicier flavor, you can add a pinch of chili powder or cayenne pepper to the chicken seasoning.
