Ingredients
  

  • all purpose flour
  • sugar
  • cocoa powder
  • baking soda
  • salt
  • strong coffee
  • milk
  • vegetable oil
  • vanilla extract
  • chocolate chips

Instructions
 

  • Preheat your oven to 180°C (350°F). Line a muffin tin with muffin liners.
  • In a mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  • In a separate bowl, combine the cooled brewed coffee, milk, vegetable oil, and vanilla extract. Mix until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Fold in the chocolate chips, reserving a few for topping the muffins, if desired.
    Divide the batter equally among the muffin liners, filling each about 2/3 full. Top each muffin with a few chocolate chips, if desired.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove the muffins from the oven and let them cool in the muffin tin for a few minutes, then transfer them to a cooling rack to cool completely.
  • Serve the cappuccino muffins as a delicious breakfast treat, snack, or dessert.

Notes

For an extra coffee flavor, you can add 1-2 tablespoons of instant coffee granules to the dry ingredients.
Feel free to adjust the amount of sugar to your preference. You can also use brown sugar for a slightly deeper flavor.
