  • Olive oil
  • Spinach
  • Parmesan
  • Ricotta
  • Salt
  • All purpose flour
  • Eggs
  • Nutmeg

  • Make ready all your ingredients and grab a sizeable frying pan and then pour in some olive oil and heat it. When heated, add in your chopped spinach and saute for some minutes and then take it off the heat.
  • In a bowl, mix together ricotta, chopped spinach, Parmesan, and one egg.
  • Season the mixture with salt, pepper, and a pinch of nutmeg if desired. Mix well.
  • On a smooth surface, pour your all purpose flour and then break the egg and mix it with the flour plus a pinch of salt. Add some olive oil or water to be able to mix it well and then knead the dough, punch it and chill and then use a pasta machine or pasta roller to squeeze your dough and achieve your desired thickness.
  • Now, flour a surface and spread the dough on a smooth surface and add in the spinach and ricotta mixture.
  • Fold the pasta over the filling and press around the edges to seal, forming half-moon shapes.
  • Bring the two corners of the half-moon together, forming a ring, and press to seal the tortellini.
  • Cut them and fold it, boil in salted water until al dente and then fry them in another saucepan with olive oil.
  • When it's cooked through and a crunchy texture is formed, remove from the olive oil and serve.
