Making Burrata can be challenging, so be patient and follow the steps carefully. Adjustments may be needed based on the type of milk and other factors.

Ingredients
  

  • 1 gallon whole milk
  • 1/4 tablet of rennet dissolved in the same amount of cool, non-chlorinated water
  • 1 teaspoon citric acid
  • 1 teaspoon salt
  • Ice water bath

Instructions
 

  • Make ready all your ingredients and pour the milk into a large pot and slowly heat it
  • After heating, dissolve citric acid in 1/4 cup cool, non-chlorinated water and add it to the milk, stirring gently.
  • You then pour the dissolved rennet into the milk and stir gently for about 30 seconds. You then allow the mixture to sit undisturbed for about an hour until a firm curd forms.
  • Cut the curd into cubes using a long knife and heat the curds over 30 minutes, stirring occasionally.
  • Drain the whey after the curds have rested for some minutes.
  • Create the creamy filling by mixing the curds with salt.
  • You then take a handful of curds, create a hollow, and fill it with the creamy mixture. Close the curd around the filling, forming small Burrata balls and immerse the Burrata in an ice water bath for about 20 minutes.
  • Finally, your homemade Burrata is now ready to be served. Drizzle with olive oil, sprinkle with salt, and serve with crusty bread or alongside fresh tomatoes.

Notes

Note: If you are using pasteurized milk, add liquid calcium chloride to the milk and stir well after adding the milk to the pot.
