whole cow milk

lime juice/vinegar
Instructions
Boil some milk in a saucepan.
Add the lemon juice or vinegar to the milk and stir till milk starts to curdle. If it doesn’t curdle after some time of stirring, add more lime juice.
When the greenish whey appears, pour the curdled milk into a pan lined with a cheese cloth.
After this, bring the edges of the cheese cloth together and squeeze the rest of the whey out of it.
Rinse the bundle of chenna in water to remove the after taste of lime juice.
Put a weight on the chenna bundle for about 7 minutes.
After this, remove the chenna and at this point you can use it for your sweets like sandesh, rasgulla and so on.

A perfectly made chenna must be soft and moist. Chenna contains calcium, protein and vitamin B2.
