Equipment

  • Mesh strainer or colander.
  • Wooden spoon

Ingredients
  

  • 1 kg tripe
  • 2 seasoning cubes
  • onion
  • ginger
  • cayenne pepper
  • ½ salt
  • Water

Instructions
 

  • Clean the tripe well and chop it into smaller sizes as you prefer. Wash well.
  • Put the tripe into a saucepan and add your onions, salt, ginger, pepper and stock cubes.
  • Add some water to it, cover with the lid and cook for about 2 hours or until tripe is tender. Stir occasionally while it is on fire and add more water when necessary.
  • When your mogodu is ready, drain any leftover stock from it and serve.

Notes

Mogodu is a meal prepared by the South Africans which consists of chopped tripe that has been stewed. Tripe is meat that comes from the stomach lining of animals like cow, sheep, goat, pig and is also known as offal. The Zulu people of South Africa are usually the ones who make this dish.
