Nkate cake is an easy to prepare snack, common amongstGhanaians. It is also referred to as groundnut cake, as groundnut is theEnglish name for “nkate”.
Crush them halfway either in a blender or earthenware bowl.
Pour some oil into a saucepan on fire and add sugar.
Stir the sugar with the oil till the sugar melts and turns brown.
Add groundnuts to mixture and stir till it mixes well.
Get a flat tray or chopping board and smear oil on it.
Pour groundnut mixture onto the tray or chopping board, and use arolling pin to make a flat design.
Afterwards, cut the cake into smaller pieces as you want it and keep itin a covered container, away from air.
