In a saucepan, bring 2 cups of water to a boil. Add salt to taste.
Gradually pour the maize meal (pap) into the boiling water while stirring continuously with a whisk or wooden spoon. This will prevent lumps from forming. Reduce the heat to low, cover the saucepan, and let it simmer for about 10-15 minutes, stirring occasionally, until the pap is cooked and thickened. Adjust the consistency by adding more water or maize meal as needed. Once cooked, remove from heat and set aside.
In a separate large skillet or frying pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
Add the diced bell pepper, zucchini, and carrot to the skillet. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
Add the frozen mixed vegetables to the skillet and continue cooking for another 5 minutes, until all the vegetables are tender and cooked through.
Sprinkle the paprika, dried thyme, and black pepper over the vegetables. Stir well to combine all the flavors and cook for an additional 2 minutes.
