Hasa Adas, also known as Lentil Soup with Fried Onions, is a popular Middle Eastern dish. It is a hearty and flavorful soup made primarily with lentils and topped with crispy fried onions. Here's a simple recipe to make Hasa Adas:
Rinse the lentils under cold water until the water runs clear. Drain and set aside.
In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until they become golden brown and crispy. Remove half of the fried onions and set them aside for garnishing.
To the pot with the remaining onions, add the minced garlic, ground cumin, and ground turmeric. Cook for another minute until fragrant.
Add the lentils to the pot and stir well to coat them with the onion and spice mixture.
Pour in the vegetable or chicken broth and season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes until the lentils are tender.
Once the lentils are cooked, you can either blend the soup with an immersion blender for a smoother texture or leave it as is for a chunkier consistency.
Serve the Hasa Adas hot, garnished with the reserved fried onions and some fresh cilantro or parsley if desired.
