Though potatoes may be thought of as a fattening food, a medium, unsalted plain baked potato with skin has only 160 calories and is naturally fat- and cholesterol-free. Each potato also packs about 4 grams of fiber and 4 grams of protein, which keeps us feeling full.
Peel and slice potatoes 5mm thick then place into a baking dish.
Combine cream or milk and salt and pour over potatoes.
Sprinkle the grated cheddar cheese on top of the potatoes and cover the pan with aluminium foil to avoid burning the cheese and ensure that the potatoes will bake more evenly for about 45 minutes.
