Ezekiel Bread Recipe

Ezekiel bread is different for from most other breads for several reasons. Whereas most types of bread contain added sugar, Ezekiel bread contains none. It is also made from organic, sprouted whole grains and legumes. Sprouting changes the nutrient composition of grains and legumes significantly.
Ezekiel bread is a flourless bread made from sprouted grains. It's named after the Old Testament verse Ezekiel 4:9, which reads: “Take wheat and barley, beans and lentils, millet and put them in a storage jar and use them to make bread for yourself…” It has a rich flavor and dense texture.

Ingredients
  

  • water - warm

    honey

    olive oil

    Active dry yeast - or 25g fresh

    wheat flour - or wheat berries

    spelt flour - or spelt grains

    millet flour or millet

    green lentils - dry

    kidney beans, black beans*

    oat bran

    salt

Instructions
 

  • Gather all your ingredients
  • Preheat your oven.
  • Activate the yeast with the water, honey, and oil in a bowl.
  • Stir the grains and beans together, then grind them in a flour mill.
    This part is not needed if your items are already in the floured state.
  • Add this flour mixture to the yeast mixture and stir until well combined - the dough will be very sticky and wet.
  • Grease a loaf pan and pour the dough into prepared loaf pans and let it rise.
  • Bake in preheated oven at 350 F (175 C) for about 40 minutes, or until golden brown.
  • Remove your bread from the oven and place it on a cooling rack and let it sit for about 30 minutes to cool off before cutting it into slices and enjoy.

Sprouted grains give Ezekiel bread far more nutritional value than whole wheat bread. Ezekiel bread has more protein, more fibre, and lower glycaemic index for those who want to maintain blood sugar levels throughout the day.
