Equipment

  • saucepan
  • Wooden spoon

Ingredients

  • maize meal
  • water
  • salt

Instructions

  • In a large saucepan, bring the water to a boil over high heat. In a separate bowl, mix the maize meal with a little cold water to form a smooth, lump-free paste.
  • Slowly pour the maize meal mixture into the boiling water while stirring continuously.Reduce the heat to low and cover the saucepan with a lid. Let it simmer for about 20 minutes, stirring occasionally to prevent lumps from forming.
  • After 20 minutes, remove the lid and stir the pap vigorously with a wooden spoon for a few minutes to break up any remaining lumps and ensure a smooth consistency. Add the salt and continue stirring for another 5 minutes to cook the pap thoroughly.
  • Once the pap reaches a thick, porridge-like consistency, remove it from the heat. Allow the pap to rest for a few minutes to firm up before serving.
  • Serve the pap as a side dish with your favorite stew, grilled meat, or any other desired accompaniment. Enjoy the delicious taste of traditional South African pap!

Notes

Adjust the consistency of the pap by adding more water or maize meal as needed during cooking.
For a creamier texture, you can add a knob of butter or a splash of milk to the pap before serving.
Leftover pap can be refrigerated and reheated later. Simply add a little water or milk when reheating to revive its consistency.
