Red Red African Dish

Black-eyed peas contain an impressive amount of beta carotene, which the body converts to vitamin A. In one serving alone, black-eyed peas meet a quarter of an adult's daily vitamin A needs. Vitamin A helps maintain healthy eyes and skin, protecting and lubricating the mucous membranes around them.

Notes

If you have a pressure cooker, use it to cook the beans till soft. It reduces the cooking time considerably.
The color of the dish clearly defines why it is named as red red since the palm oil and all the other ingredients gives it that red color that is needed. You can enjoy this with some gari and fried ripe plantain or your rice and garnish with some pear
