Kontomire Soup Recipe

Kontomire soup is a local soup of the people from the Brong Ahafo Region of Ghana.[1][2] It is made from cocoyam leaves (locally called kontomire) together with other ingredients (tomatoes, snails, smoked fish, onions, green pepper, turkey berries (Asante - twi kwahu nsusua) and salt).[3][

Ingredients
  

  • Crab
  • Snails
  • Smoked fish
  • Koobi (salted dry tilapia)
  • Small salted fish (momone)
  • Cocoyam leaves
  • Kwahu susua (Turkey berries)
  • Onion
  • Tomatoes
  • Tomato paste
  • Ginger
  • Garlic
  • Salt
  • Dried fish (fish herring)
  • Salmon

Instructions
 

  • Neatly wash your saucepan and wash your meat and place it in your saucepan.
    I used different kinds of meat to get the soup tasting deliciously well.
  • In another saucepan, wash your kontomire (cocoyam leaves) and kwahu nsusuaa (turkey berries) and add a medium sized onion and one fresh tomato.
  • Bring it to a boil on medium heat and take it off the fire, drain the water and add some ice cubes on the kontomire or cocoyam leaves to prevent it from boiling further.
  • Blend or chop your onions into small sizes and pour on the meat , add in your blended ginger, garlic and salt.
  • Let it steam for some minutes on medium heat and add in your tomato paste and blend your tomato and pour it on.
  • Allow it to boil for some minutes and add in your blended kontomire.
  • Add in some water depending on the thickness you want.
  • Taste and add salt and leave to boil for some minutes.

Is kontomire good for high blood pressure?
The Omega 3, an essential fatty acid, help produce hormones to control the contraction and relaxation of arteries wall. If this mechanism is going well, the blood pressure can be kept at a normal level. Cocoyam leaves also contain calcium which is good for the formation and maintenance of healthy bone.
