Ingredients
  

  • grated cassava
  • all purpose flour
  • chopped onion
  • garlic
  • olive oil
  • baking powder
  • salt and black pepper
  • fresh cilantro

Instructions
 

  • In a large bowl, combine grated yuca, flour, onion, garlic, cilantro, baking powder, salt, and black pepper.
  • Mix well to combine. Heat vegetable oil in a deep frying pan or skillet over medium heat.
  • .Take a tablespoon of the yuca mixture and shape it into a small patty or ball. Repeat with the remaining mixture.
  • Carefully place the yuca fritters into the hot oil, making sure not to overcrowd the pan. Fry them in batches if necessary. Cook the fritters for about 3-4 minutes on each side, or until they turn golden brown and crispy.
  • Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil. Serve the yuca fritters warm as an appetizer or a side dish.
  • They can be enjoyed on their own or served with dipping sauces such as salsa, aioli, or sour cream.
