Ingredients
  

  • potatoes
  • vegetable oil
  • onions
  • eggs
  • salt and pepper
  • chilis

Instructions
 

  • Rinse the cut potatoes in water to remove excess starch. Pat them dry with a kitchen towel.
  • Heat vegetable oil in a deep frying pan or pot over medium-high heat. Carefully add the potato fries and fry them until golden brown and crispy. Remove the fries using a slotted spoon or tongs and place them on a paper towel-lined plate to drain excess oil. Set aside.
  • In a mixing bowl, crack the eggs and whisk them until well beaten. Season with salt and pepper.
    Heat a non-stick frying pan or skillet over medium heat. Add a little oil if needed.
  • Add the chopped onions, tomatoes, and green chili (if using) to the pan. Sauté until the onions are translucent and the tomatoes are soft.
  • Pour the beaten eggs over the sautéed vegetables, ensuring they spread evenly. Allow the eggs to cook and set slightly.
  • Carefully place the crispy fries on top of the partially cooked omelette, pressing them gently into the eggs.
  • Flip the omelette to cover the fries completely. Cook for a few more minutes until the eggs are fully cooked and the omelette is golden brown.
  • Transfer the Chipsi Mayai to a serving plate. Garnish with fresh cilantro or parsley, if desired.
  • Serve the Chipsi Mayai hot and enjoy it as a delicious and satisfying snack or meal.
