In a mixing bowl, whisk together the coconut milk, curry powder, fish sauce, soy sauce, brown sugar, grated ginger, minced garlic, and ground black pepper.
Add the beef strips to the marinade and toss to coat.
Cover and refrigerate for at least 2 hours, or overnight. Preheat the grill or grill pan to medium-high heat
