Ingredients
  

  • calamari rings
  • corn flour
  • sea salt
  • cracked black pepper
  • vegetable oil
  • lime wedges

Instructions
 

  • Place the cornflour, sea salt and cracked black pepper into a large bowl and mix well.
  • Add the calamari rings to the bowl and toss them around until they are coated with the flour mixture
  • Heat the oil in a large frying pan over medium-high heat.
  • Once the oil is hot, carefully add the calamari rings to the pan in batches. Fry for 2-3 minutes, or until golden brown and crispy.
  • Use a slotted spoon to transfer the cooked calamari rings to a plate lined with paper towels to drain any excess oil.
  • Serve the salt and pepper calamari immediately with lime wedges on the side.

Notes

Be sure to clean the squid properly before cooking. Remove the head, tentacles, and innards, and pull out the transparent cartilage from inside the tube.
Do not overcook the calamari as it can become rubbery and tough. It only takes a few minutes to cook on each side.
Adjust the amount of salt and pepper to your taste preferences.
This dish is best served hot and fresh. Leftovers may not be as crispy.
The calamari can be served with a variety of dipping sauces such as tartar sauce, aioli, or sweet chili sauce.
