Ingredients
  

  • oil
  • ginger
  • garlic
  • lemon grass
  • laksa paste
  • chicken stock
  • coconut milk
  • chicken breast
  • peeled prawns
  • fish sauce
  • lime juice
  • rice noodles
  • bean sprouts
  • fresh cilantro
  • green onions
  • lime wedges

Instructions
 

  • Heat the oil in a large pot over medium heat. Add the ginger, garlic, and lemongrass and cook for 1-2 minutes, until fragrant.
  • Add the laksa paste and cook for another minute.
  • Pour in the chicken stock and coconut milk and bring to a boil.
  • Add the chicken and prawns and cook for 5-7 minutes, or until the chicken is cooked through and the prawns are pink and cooked.
  • Stir in the fish sauce and lime juice.
  • To serve, divide the cooked noodles between four bowls. Ladle the laksa over the noodles and top with bean sprouts, cilantro, and green onions.
  • Serve with lime wedges on the side.

Notes

You can use any type of curry paste you prefer, but if you want a more authentic flavor, try to find Malaysian or Singaporean curry paste.
If you want a milder laksa, use less curry paste and add more coconut milk or water to the broth.
If you're using dried rice noodles, soak them in cold water for about 30 minutes before cooking.
If you want to make the dish vegetarian or vegan, simply omit the chicken and prawns and use vegetable broth instead of chicken broth. You can also add tofu or tempeh for protein.
Laksa can be quite spicy, so adjust the amount of chili according to your preference.
The broth can be made in advance and stored in the refrigerator or freezer until you're ready to use it. Just reheat it gently on the stove before serving.
Laksa is traditionally served with a spoon and chopsticks, but feel free to use a fork or whatever utensils you prefer.
Be sure to have all your ingredients prepped and ready before you start cooking, as the process moves quickly once you start.
