Equipment

  • Thick non-stick pan
  • Wooden spoon
  • Earthenware bowl / clay pot

Ingredients
  

  • 3 cups full cream milk
  • 2 tbsp sugar
  • 2 tbsp brown sugar
  • 1 tbsp water
  • 2 tbsp curd/yoghurt
  • Chopped dry fruits

Instructions
 

  • Heat the milk in a thick non-stick pan.
  • Stir occasionally while the milk boils.
  • Add two tablespoons of sugar and stir.
  • Allow the milk to boil till it thickens.
  • Stir until milk reduces to half the quantity.
  • In another pan, put in two tablespoons of brown sugar and add a teaspoon of water.
  • Allow the sugar to caramelize and add the warm milk. Mix well.
  • Turn off the heat and let it cool down.
  • After it has cooled, transfer it into an earthenware or clay pot.
  • Add a teaspoon of curd and stir.
  • Cover the clay pot and let the mishti doi set for 8 hours in a warm environment.
  • Keep it in the fridge for about 2 hours so that a creamy texture can be attained.
  • Garnish it with your dried fruits and serve.
