Equipment

  • Deep fryer
  • Slotted spoon

Ingredients
  

  • 7 cups all-purpose flour
  • ¾ cups sugar
  • salt
  • 10 g yeast
  • water
  • Vegetable oil
  • cheddar cheese

Instructions
 

  • Put your flour, sugar, yeast and salt into a large bowl and mix together.
  • Add the water and two tablespoons of oil. Mix together and thoroughly, using your hand or a mixer.
  • Cover the dough for about 45 minutes to allow it to rise.
  • Knead the dough again and let it sit for 15 more minutes.
  • Heat your oil for frying. Let it be on medium heat. If you don’t have a deep fryer, let the oil be enough to cover the amagwinya during frying.
  • Divide the dough into smaller balls and drop them gently into the oil. Fry till it becomes golden brown.
  • Remove from the oil and transfer them onto the lined tray or plate.
  • Melt the cheddar cheese and drizzle on top of the amagwinya.

Notes

Amagwinya or Vetkeok, translated in English as ‘fat cake’ is a tasty doughnut snack eaten mostly by the Zulu people of South Africa. In Ghana it is known as ‘Boflot’.
