Sweet Potato Pie Recipe
Nothing beats the day than a slice of this pie. It’s an amazing meal and you will love it.
2 medium sweet potatoes
1/3 cup butter, softened
1/2 cup sugar
2 large eggs
3/4 cup evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 unbaked pastry shell
Peel and cut sweet potatoes in cubes into a medium saucepan. Add water and bring to boil.
Reduce heat then cook uncovered until tender, 13-15 minutes. Drain potatoes. Allow it to cool
In a bowl, mash cooked potatoes until very smooth.
Cream butter and sugar together. Add in eggs beat one at a time then mix well..
Add milk, two cups mashed sweet potatoes, vanilla, cinnamon, nutmeg and salt.
Pour mixture into a pie shell. Bake at 425° for 15 minutes.
Reduce heat to 350°; bake until a knife inserted in the center comes out clean. Allow it to Cool.
Serve it warm or cold
