Strawberry Crepes with Strawberry Mascarpone Cream Recipe

Strawberry Crepes with Strawberry Mascarpone Cream

Strawberry crepes filled with soft and light strawberry mascarpone cream. These crepes are also topped with homemade strawberry sauce.




1 cups flour

2 eggs

6 teaspoons strawberry sauce

1/3 cup whole milk

2 cup vegetable oil

1 teaspoon pure vanilla extract

1/2 tesspoon baking soda

1 teaspoon sugar

1/4 teaspoon salt

1 cups of hot water

Strawberry Mascarpone Cream:

8 oz Mascarpone

1 1/2 cups whipped topping like Cool Whip

2 teaspoons Strawberry Sauce

1 tsp vanilla extract

Strawberry sauce



Grease skillet with oil.

Preheat skillet on medium high heat.

Combine flour, egg, strawberry sauce, milk, oil, vanilla, salt, sugar and baking soda. Whisk all well.

Gradually, start adding 1/4 cup of the hot water at a time into the batter. Whisk constantly until the batter reaches the light smooth consistency

Pour about half a ladle into the hot pan and swirl to spread the batter thinly over the bottom of the pan.

Cook for a few seconds on each side.

Remove and set aside. Allow it to cool down completely

How to make Cream:

Beat mascarpone, strawberry sauce and vanilla with an electric mixer, for 3 minutes.

Scrape sides and bottom of the bowl and fold in whipped topping until all smooth.

Drizzle rolled crepes with some strawberry sauce.
