1 smoked turkey wing
1/2 cup split peas
1 potato cut into cubes
Dumplings (quantity of choice) (Homemade Dumplings Recipe)
3 ears sweet corn, cut into 2 inch pieces
1 chopped onion
3 cloves crushed garlic
10 sprigs thyme
3 chopped scallion
2 teaspoon chopped cilantro
1/2 scotch bonnet pepper
4 Jamaican pimentos
2 chicken bouillons
1 teaspoon salt
Steps for Smoked Turkey Wings and Corn Soup Recipe
Place smoked turkey wing, split peas and 5 cups water in a large pot. Bring it to a boil. Cook until peas are tender and can easily crush.
Stir in potato, corn, onion, garlic, thyme, scallion, cilantro, pepper, pimento, bouillon then cook until potato is soft.
Add dumplings and cover soup. Reduce to a simmer for 10 minutes. Dumplings will float to the top when done.
Remove from heat. Then remove the turkey wing from the soup. Shred the meat using a fork into desired size.
Return meat to the soup and serve!
