Pumpkin Butter Croissant Bread Pudding with Bourbon Sauce

Ingredients for Pumpkin Butter Croissant Bread Pudding with Bourbon Sauce
5 large croissants
5 large eggs
1/2 cup granulated sugar
1 cup pumpkin butter
2 cup milk
1 cup heavy cream
3 teaspoons Bourbon
1 teaspoons pure vanilla extract
3 teaspoons butter
1/3 cup flour
2 cups milk
1/4 cup + 2 teaspoons sugar
1/3 cup bourbon
3 teaspoons heavy cream
Steps in making Pumpkin Butter Croissant Bread Pudding with Bourbon Sauce
Preheat oven to 350 degrees.
Tear croissants into small pieces, about 2 inches then pour into a greased 13×9 baking dish.
Add eggs, sugar, vanilla and pumpkin butter in a medium size bowl then whisk to combine.
Add milk, cream and bourbon and mix to combine. Pour over croissants. Allow it sit for 15 minutes.
Place into preheated oven and bake for 50 minutes to 1 hour. Remove from oven and allow it to cool.
Melt 2 tablespoons butter in a saucepan over medium heat. Remove from heat then stir in flour to combine.
Gradually whisk in milk and sugar. Add milk slowly to avoid mixture being lumpy.
Place on the stove over medium heat and stir until the sauce boils and thickens. Reduce heat and simmer for 10 minutes
Remove from the heat then add 1 tablespoon butter, cream and bourbon. Cover with cling wrap to avoid skin from forming. Serve on top of bread.
