Misti kumra bhaji is a vegetable dish of Bangladesh origin. The word “Misti kumra” means pumpkin and “Bhaji” means fry. It is a popular dish and easy to make as well.

Ingredients

500 grams of pumpkin (peeled and diced into medium sizes)

1 onion (sliced)

1 teaspoon of nigella seeds

2 tablespoons of mustard oil

½ teaspoon of turmeric powder

2 dry red chillies

Salt (to taste)

 

What Misti Kumra Bhaji Can Be Served With

Misti kumra bhaji is usually served with hot cooked rice and dal or with roti (flat bread).

 

Steps

1.Wash the peeled and diced pumpkin in a bowl of water and drain the water away. Set aside.

2.Pour the mustard oil into a pan and heat it up.

3.When it heats up, gently toss in the dry red chillies and the nigella seeds. Let them sizzle.

4.Add in the sliced onions and stir. Let it fry till the onions soften.

5.Toss in the diced pumpkin.

6.Add salt and turmeric powder and stir. Allow it to fry for about 3 minutes on high heat while you stir regularly.

7.Cover the pan with the lid and cook the meal on medium heat for about 12-15 minutes. Stir occasionally while it is cooking.

8.When the pumpkin is cooked, increase the heat to help dry up excess moisture from the food.

9.Turn off the heat when this is done and serve. Enjoy!
