Mishti doi is a fermented sweet yoghurt prepared from milk, curd and sugar. It is a Bangladesh dish also enjoyed in some Indian states. It is eaten as a dessert and is also prepared during festivities like Durga, Puja and Bengali New Year. The mishti doi recipe takes a long time to be ready, especially when it comes to the setting process. However, it is not tedious to make.

Ingredients
3 cups of full cream milk
2 tablespoons of sugar
2 tablespoons of brown sugar
1 teaspoon of water
2 teaspoons of curd/yoghurt
Chopped dry fruits
What Mishti Doi Can Be Served With
Mishti doi can be served with rasgulla or dried fruits.
Special Utensils
- Thick non-stick pan
- Earthenware bowl / clay pot
- Wooden spoon
Steps
- Heat the milk in a thick non-stick pan.
- Stir occasionally while the milk boils.
- Add two tablespoons of sugar and stir.
- Allow the milk to boil till it thickens.
- Stir until milk reduces to half the quantity.
- In another pan, put in two tablespoons of brown sugar and add a teaspoon of water.
- Allow the sugar to caramelize and add the warm milk. Mix well.
- Turn off the heat and let it cool down.
- After it has cooled, transfer it into an earthenware or clay pot.
- Add a teaspoon of curd and stir.
- Cover the clay pot and let the mishti doi set for 8 hours in a warm environment.
- Keep it in the fridge for about 2 hours so that a creamy texture can be attained.
- Garnish it with your dried fruits and serve.
