Mango Rice Pudding Recipe
My mom use to dish out this meal to me on special days. I enjoyed every bit of it. Due to the mango toppings, it’s just fruity nice
1 cup uncooked brown rice
1 medium ripe mango
1 cup vanilla soy milk
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
Chopped peeled mango(optional)
2 cups water
1/4 teaspoon salt
Boil water in saucepan then add salt. Stir in rice.
Cover saucepan and reduce heat. Cook it for about 35-40 minutes rice is tender.
Meanwhile, peel, seed and slice mango. Mash mango with a potato masher or fork.
Stir in milk, sugar, cinnamon and mashed mango into rice.
Cook rice uncovered until liquid is almost absorbed. Stir continuously. Add vanilla
Serve warm or cold with chopped mangoes.
