Mandzi(Kenya donuts) Recipe

Mandzi is a soft triangle-shaped donuts eaten and bought most in East Africa. They can be taking as snack or with coffe. Wondering how it is done?  Follow the steps to get yours ready.


Ingredients for Mandzi Recipe

1/2 cup warm water

2 teaspoon active dry yeast

1/2 cup coconut milk

1 large egg

1/2 cup sugar

1 teaspoon salt

3 cups all purpose flour plus 1/4 more

3 tablespoons coconut flakes

1 teaspoon crushed cardamom spice

1/2 teaspoon grated nutmeg

Vegetable oil



Pour coconut milk, salt , sugar and yeast in warm water. Set aside for 5 minutes.

Add eggs and stir then add 3 cups flour, crushed cardamom, nutmeg, grated coconut and mix by hands with spatula or in a stand mixer.

Form a dough and turn it on a lightly floured surface.

Knead dough until all the ingredients are thoroughly and not too sticky.(Sprinkle flour when needed) about 7 minutes.

Grease bowl with oil and place dough turning sides to coat.

Cover with a clean cloth and let rise in a warm for 1 to 2 hours or until doubled.

Punch the dough down to remove air.  Then divide into 4 equal pieces, then form balls and roll out each piece into 6 triangular pieces.

Pour vegetable oil in a large pan and deep fry(Make sure the oil is heated before placing in mandzi)

Fry until the bottom side is golden brown, quickly turn the mandzi over and fry until the other side is golden brown.

Remove them from oil and place them on napkins right away to soak up some of the excess oil.

If desired, you can sprinkle with powdered sugar and serve warm.
