Loaded Vegetable Pasta Casserole
Ingredients for Loaded Vegetable Pasta Casserole
8 oz dry pasta
1/2 cup reserved pasta water
1 lb ground turkey or beef
1 diced onion
3 diced celery stalks
3 minced garlic
1 teaspoon tomato paste
1 teaspoon dried parsley
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
Salt and pepper
2 teaspoons Worcestershire sauce
1 teaspoon coarse whole grain mustard
28 oz can diced tomatoes
12 oz frozen vegetables
Steps in making Loaded Vegetable Pasta Casserole
Boil water in large pan then add salt to taste. Add pasta and cook until tender. Drain and reserve 1/2 cup of pasta water.
Over medium-high heat, add meat in a skillet and cook for a few minutes. Stir in onion and celery. Cook until meat is no longer pink. Then stir in garlic and cook for 3 minutes Drain excess grease.
Add and stir in tomato paste, salt, pepper, parsley, oregano, thyme, and crushed red pepper flakes. Cook for about 5 minutes.
Stir in tomatoes, pasta water, Worcestershire, and mustard. Bring to boil, reduce heat, and simmer for 10 minutes.
Add frozen veggies and cook until tender. Remove from fire and serve warm
