Ingredients for blueberry Muffins
2 teaspoons Baking Powder
1/4 teaspoon Baking Soda
1/2 teaspoon salt
3/4 cup cane sugar
1 teaspoon Fresh Lemon Zest
1/2 Cup unsalted melted butter
2 large eggs
1 teaspoon vanilla extract
1 cup whole milk
3 teaspoon fresh lemon juice
8 ounces fresh blueberries
Preheat oven to 375 degrees F.
Line a muffin pan with paper muffin cups.
Combine all the ingredients in a large mixing bowl with a hand mixer except blueberries and lemon zest
Beat ingredients until the batter is smooth and creamy.
Fold in the blueberries and lemon zest. Pour batter into the muffin liners.
Bake the lemon blueberry muffins for 25 minutes or until a toothpick comes out clean.
Serve with icing on top
