Lemon Blueberry Bread
Lemon Blueberry Bread is sweet and makes a wonderful dessert. You will love baking it
2 cups All-Purpose Flour
1 teaspoon Baking Powder
1/2 teaspoon Salt
1.5 cups granulated sugar
1 tablespoon lemon zest
5 teaspoons vegetable oil
5teaspoon Freshly Squeezed Lemon Juice
1/2 Cup Buttermik
2 large eggs
1 teaspoon vanilla
1.5 cups washed and rinsed fresh blueberries
Preheat oven to 350 degrees
Grease a 9 x 5 -inch loaf pan.
Whisk and mix together flour, baking powder, and salt in a medium bowl until well combined. Set aside.
Mix sugar and lemon zest until the sugar becomes light orange in color in a separate small bowl.Then set aside.
Add to the bowl of a stand mixer buttermilk, oil, lemon juice, eggs, and vanilla. Mix on low speed until the ingredients are uniformly combined.
Stir in flour mixture and the lemon zest sugar mixture. Continue to beat on low speed until all the ingredients are smooth like batter.
Add blueberries and use a wooden spoon or spatula to stir until well incorporated.
Transfer the batter to the greased loaf pan then place in the oven.
Bake for about 65-70 minutes until toothpick insterted at the center comes out clean. Place aluminium foil over pan if bread becomes too brown.
Remove bread from the oven and allow to cool for 5-7 minutes before transferring from the pan to a cooling rack
