Key Lime Pie Sweet Rolls

 

Ingredients for Key Lime Pie Sweet Rolls

Graham Flour Brioche:

1/2 cup warm milk(110 degrees)

1 envelope of active dry yeast

1 1/4 cups All-Purpose flour

1 cup Graham Flour

6 teaspoons butter

2 teaspoons honey

1/2 teaspoon salt

2 eggs

Key Lime Pie Filling:

8 ounces cream cheese

9 ounces condensed milk

1/4 cup key lime juice

1 cup crushed graham crackers

White Chocolate Key Lime Icing:

2 cups powdered sugar

2 teaspoons butter

1 Teaspoon key lime juice

1/3 cup white chocolate chips

 

Steps in making Key Lime Pie Sweet Rolls

In a mixer bowl, whisk together milk, yeast and 1 cup of all-purpose flour. Remove mixing bowl and cover with plastic wrap and set aside for 30 minutes.

Place mixing bowl back onto the mixer. Add the eggs one at a time.Add the remaining flour to the mixture and mix until combined. With the dough hook now on, add honey and salt.

Stir in the1 teaspoon butter at a time and do not add the next pat of butter until all is completely dissolved into the dough.Knead until you have a stick dough but one that pulls away from the sides of the bowl.

Spray a bowl with oil or baking spray and add the dough. Cover with plastic wrap and allow it to rise until doubles in size.

Punch down and place in fridge for at least 8 hours

How to make key lime pie filling.

Beat together cream cheese and condensed milk until smooth. Scrape down the sides of bowl

Stir in key lime juice and beat until smooth. Place in fridge until ready to use.

Remove the dough from fridge. Place it on a lightly floured surface

Roll out dough into a 10 X 14-inch rectangle and spread the key lime pie filling. Sprinkle with crushed graham cracker pieces.

Start at one of the long sides, roll the dough up, and pinch the seam well to seal. Cut dough into 2 inch thick slices, and then place them in the prepared pan.

Cover with plastic wrap and let rise about 1 hour.

Preheat the oven to 350F. Bake until golden brown, about 25-30 minutes.

Remove from oven and allow it to cool

How to make icing:

Melt butter and white chocolate chips together in a medium saucepan. Stir in powdered sugar.

Add  key lime juice. If mixture is too thick, add more key lime juice or milk.  Mix until well combined.

Pipe or spread the icing on rolls
