INSTANT POT KETO TUSCAN SOUP

INGREDIENTS FOR INSTANT POT KETO TUSCAN SOUP
1 lb. Hot Italian sausage
1 large chopped onion
3 cloves minced garlic
1 teaspoon dried oregano
1/2 cup drained and chopped sun-dried tomatoes,
6 cups low-sodium chicken broth
1 bunch curly kale, leaves stripped and chopped
3/4 cup heavy cream
Freshly ground black pepper
STEPS IN MAKING INSTANT POT KETO TUSCAN SOUP
Set a 6-qt Instant Pot to saute mode. Add sausage then break up and cook until sausage is lightly browned for about 3-5 minutes. Drain excess fat.
Stir in garlic, onion, and oregano. Cook, stirring continuously until onions have become soft for about 2-3 minutes.
Stir in chicken broth and sun-dried tomatoes. Season with pepper
Select manual setting; adjust pressure to high, and set time for 5 minutes. When finished cooking, do a quick-release.
Select saute mode and stir in kale until wilted for about 2 minutes.
Stir in heavy cream for about 1 minute. Adjust seasoning with salt and pepper,
Serve soup with fresh grated Parmesan and parsley.
