  • Yam or sweet potato (the choice is yours)
  • Salt
  • Seasoning
  • Vegetable oil
  • Chicken (optional)
  • Thyme (optional)

Steps to fry Yam into Yam chips.

  1. Peel yam and cut into thin sizes
  2. Wash thoroughly with enough water.
  3. Transfer washed yam into another bowl.
  4. Sprinkle salt, pepper and thyme over it.
  5. Fry in hot vegetable oil until golden brown.
  6. Transfer to paper towel or colander to remove oil

  • Onion
  • Medium-sized bell pepper
  • Spices
  • Vegetable oil
  • Garlic
  • Salt
  • Ginger

Steps to prepare hot pepper sauce.

  1. Grind scotch bonnet, onions, bell pepper, garlic and ginger in an eathernware bowl (asanka)
  2. Heat oil in a saucepan over medium heat
  3. Add chopped onions and fry for about 3 minutes.
  4. Add blended stock and stir intermittently for 4 – 5 minutes.
  5. Add spices.
  6. Add salt to taste
  7. Simmer to 5 minutes
  8. Serve with fried yam (yam chips).
