Vegetable rice is simply rice cooked with vegetables. It is a dish that can be eaten at any time of the day, but especially during lunch and dinner times. It is easy to make and doesn’t take much time.

There are different ways of preparing vegetable rice. Today, we bring you an easy and delicious vegetable rice recipe you will definitely enjoy.

 

Ingredients

2 cups of long grain rice

2 cups of chicken broth

1 small onion (chopped)

1 carrot (chopped)

½ cup of green peas

½ cup of sweet corn

 

What Vegetable Rice Can Be Served With

This dish can be served with chicken, fish, steak, pork, pepper sauce or stew.

Steps

  1. Rinse rice thoroughly and strain water from it using the colander. Set aside
  2. Pour chicken broth into a saucepan and bring to boil.(Adjust taste with more salt if necessary)
  3. Add the rice to the chicken broth on fire, cover the pan with its lid and let it cook for about 20 minutes on  medium heat.
  4. Remove the lid, use a fork to fluff the rice up a bit  and add the vegetables to it : onion, carrot, green pea and  sweet corn and mix it with the rice.
  5.  Cover and let it cook for a little more time, till it becomes tender.
  6.  Serve when your vegetable rice is ready.
