Ingredients

  • 1 bunch Ayoyo leaves
  • 500g beef or any meat of your choice
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 tablespoon ground crayfish
  • 2 cups fish or meat stock
  • 1 teaspoon ground pepper
  • Salt to taste
  • 2 tablespoons palm oil

Preparation Steps

  1. Wash the Ayoyo leaves thoroughly and remove any tough stems.
  2. Boil the beef or meat in a pot with water, chopped onions, garlic, and salt until tender.
  3. Remove the cooked beef or meat from the stock and set aside.
  4. In a separate pot, heat palm oil and sauté the diced tomatoes and onions until soft.
  5. Add the minced garlic and ground crayfish to the pot and stir well.
  6. Add the Ayoyo leaves to the pot and stir to combine with the tomato mixture.
  7. Pour in the fish or meat stock and bring the soup to a boil.
  8. Reduce the heat and let the soup simmer for about 1 hour, stirring occasionally.
  9. Add the cooked beef or meat back to the pot and simmer for another 10 minutes.
  10. Season the soup with ground pepper and salt to taste.
  11. Remove from heat and let the soup cool slightly before serving.
