Ingredients
- 1 bunch Ayoyo leaves
- 500g beef or any meat of your choice
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 tablespoon ground crayfish
- 2 cups fish or meat stock
- 1 teaspoon ground pepper
- Salt to taste
- 2 tablespoons palm oil
Preparation Steps
- Wash the Ayoyo leaves thoroughly and remove any tough stems.
- Boil the beef or meat in a pot with water, chopped onions, garlic, and salt until tender.
- Remove the cooked beef or meat from the stock and set aside.
- In a separate pot, heat palm oil and sauté the diced tomatoes and onions until soft.
- Add the minced garlic and ground crayfish to the pot and stir well.
- Add the Ayoyo leaves to the pot and stir to combine with the tomato mixture.
- Pour in the fish or meat stock and bring the soup to a boil.
- Reduce the heat and let the soup simmer for about 1 hour, stirring occasionally.
- Add the cooked beef or meat back to the pot and simmer for another 10 minutes.
- Season the soup with ground pepper and salt to taste.
- Remove from heat and let the soup cool slightly before serving.
