Brief About Aboboi

Bambara beans, also known as Vigna subterranean, is nutritious because they are made up of carbohydrates, proteins and essential amino acids. Aboboi is the name used to call bambara beans stew by the people in Greater Accra Region. 

Bambara beans can be eaten when fresh or boiled. It can be used to make flour as well. Bambara beans is a good source of nutrients. The interesting thing is that it can be made or consumed in various ways.

Ingredients for aboboi

  • 2 cup of Bambara beans
  • 1 onion (chopped)
  • 3 tomatoes (chopped)
  • 1 clove of garlic (crushed)
  • 3 tablespoons of dried powdered shrimp
  • Mackerel (broken into smaller pieces)
  • Fried meat , chopped (optional)
  • 1 tablespoon of powdered pepper
  • Salt(to taste)

 

What Aboboi Can Be Served With

Aboboi can be served with gari, sugar, tatale , fried ripe plantain.

 

Steps to prepare aboboi

  1.  Boil bambara beans in a saucepan for about two hours and set aside.(You can soak it overnight before boiling).
  2.  Pour some oil into a saucepan and put on fire.
  3.  Put the chopped onions into the oil and stir. Let it fry for a while.
  4.  Add chopped tomatoes, salt, pepper, crushed garlic and stir.
  5.  Add a little water and let it cook for a while.
  6.  Add your powdered dry shrimp, mackerel, fried meat and stir.
  7.  Add your bambara beans to the sauce on fire and stir. Leave it to cook for some time.
  8.  Remove from fire when ready and serve.
