  • In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, honey (or brown sugar), minced garlic, and grated ginger. Set aside.Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Season the fish fillets with salt and pepper on both sides.Carefully place the fish fillets in the hot skillet and cook for 3-4 minutes per side, or until cooked through and flaky. Remove the fish from the skillet and set aside.
  • In the same skillet, add another tablespoon of vegetable oil
  • Add the sliced onion, julienned carrot, bell pepper, zucchini, and snap peas to the skillet. Stir-fry for 3-4 minutes, or until the vegetables are crisp-tender.
  • Pour the sauce mixture over the vegetables in the skillet. Stir-fry for an additional 1-2 minutes, allowing the flavors to meld together.
  • Taste and adjust the seasoning with salt and pepper as desired. Serve the fish fillets on a bed of cooked rice or noodles, accompanied by the vegetable stir fry.
  • Garnish with fresh cilantro or green onions, if desired.
