Ingredients
  

  • ground beef
  • onion and bell pepper
  • garlic and chili powder
  • cooked rice
  • vegetable oil
  • flour tortillas
  • salt and pepper
  • salsa, guacamole and sour cream

Instructions
 

  • In a large skillet, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened.Add the ground beef or chicken to the skillet and cook until browned, breaking it up into small pieces with a spatula. Season with chili powder, ground cumin, salt, and pepper.
  • Stir in the cooked rice and black beans, mixing well to combine all the flavors. Remove the skillet from heat and let the filling cool slightly.
  • Take a flour tortilla and place a portion of the filling mixture in the center. Sprinkle some shredded cheese on top. Fold the sides of the tortilla inward, then roll it up tightly, ensuring the filling is enclosed.
  • In a large pot or deep fryer, heat vegetable oil to approximately 350°F (175°C).
  • Carefully place the rolled burritos into the hot oil and fry until golden brown and crispy, turning them occasionally for even cooking. Fry one or two burritos at a time to avoid overcrowding the pot.
  • Remove the deep-fried burritos from the oil and let them drain on paper towels to remove any excess oil.
  • Serve the deep-fried burritos hot with salsa, guacamole, and sour cream on the side, if desired.
