Ingredients
  

  • onion
  • garlic
  • carrot
  • bay leaf
  • split peas
  • ham hocks
  • celery
  • parsley
  • chicken broth
  • salt and pepper

Instructions
 

  • In a large pot or Dutch oven, add the ham hocks and cover them with water. Bring the water to a boil and then reduce the heat to a simmer. Simmer for 1 hour, skimming off any foam that rises to the surface.
  • Remove the ham hocks from the pot and set them aside to cool. Once they are cool enough to handle, remove the meat from the bones and chop it into small pieces.
  • Add the chopped onion, garlic, carrots, and celery to the pot with the ham broth. Stir in the split peas and bay leaf.
  • Add the water or chicken broth to the pot, and bring the mixture to a boil. Reduce the heat to a simmer and cook for 1 hour, stirring occasionally, until the split peas are tender and the soup has thickened.
  • Remove the bay leaf from the pot and discard it. Add the chopped ham to the pot and stir to combine. Season with salt and pepper to taste.
  • If desired, garnish the soup with chopped fresh parsley before serving.

Soak the split peas overnight or for at least a few hours before cooking to ensure they cook evenly and have a smooth texture.
If you prefer a smoother soup, use an immersion blender or transfer the soup to a blender to puree before adding the ham.
